This apple blondie recipe is a simple fall dessert. Baked with brown sugar, cinnamon and chopped apples, these apple squares are packed with fall flavor and require only 15 minutes of prep time!

Can we talk fall recipes? Haley here from If You Give a Blonde a Kitchen and I am aching for fall desserts. I always start the fall season with apple recipes (sorry, pumpkin spice). Today I’m sharing this delicious apple blondie bar recipe. I used my go-to blondie recipe and added chopped apples and cinnamon.

This blondie recipe lends itself well to flavorful additions. The apple squares have thick, rich taste thanks to melted butter and brown sugar, plus a little bit of fall flavor with the cinnamon apples! What are blondies made of?

Blondies are a simple dessert bar with flour, baking powder, brown sugar, butter, eggs and vanilla. They are a similar consistency to brownies, but without the cocoa and more vanilla flavor.

This blondie recipe comes together easily with less than 15 minutes of prep!

  • First, you need to whisk together flour, baking power, salt, cinnamon and nutmeg. Set this bowl aside.
  • Next, in a separate bowl, beat the butter and sugar together for about 2 minutes. Then mix in the eggs and vanilla.
  • Finish off by stirring in the flour mixture. Do not overmix.
  • Fold in chopped apples and transfer the batter to a prepared baking pan.
  • Bake the blondies for 25 to 28 minutes or until a toothpick inserted into the center comes out clean.

What is the difference between a brownie and a Blondie?

Blondies are made with a vanilla-based dough and brownies are made with a chocolate-based dough. Both include basic ingredients like flour, sugar, butter and eggs. Brownie and blondie recipes both vary and are adapted with different flavor combinations.

Tips for making apple squares

Here are some tips that will make your blondies a success:

  • Melting the butter will result in a rich, thick blondie. When you mix it with the brown sugar, make sure the two are well blended before adding the egg and vanilla.
  • Use light brown sugar for the best flavor and texture. Dark brown sugar can be too heavy, making the blondies too dense. We always recommend light brown sugar.
  • When stirring in the flour, it’s okay to leave pockets of flour. When the chopped apples are added, the remaining flour will disappear and this will prevent any overmixing of the batter.
  • Use a crisp, tart apple. We suggest Granny Smith or Honeycrisp (or Northern Spy if you can find them). They keep their texture and flavor in the baking process.

Ingredients

  • 1 1/4 cup all-purpose flour, (142 g)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter, melted and cooled (1 stick or 113 g)
  • 1 cup light brown sugar, packed (200 g)
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 2 medium apples, peeled, cored and cut into 1/4-inch squares

Instructions

  • Preheat the oven to 350° F. Line an 8-inch by 8-inch pan with parchment paper and set aside.

  • In a medium bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg. Set aside.

  • In a large bowl, whisk together melted butter and brown sugar until well combined, about 2 minutes. Add egg and vanilla and mix until incorporated. Add the flour mixture and stir just until combined (careful not to overmix). Fold in chopped apples.

  • Transfer batter to prepared baking pan (the batter will be a little thick). Bake for 25 to 28 minutes or until a toothpick inserted into the center comes out clean. Cool and cut into squares and serve.

Notes

  • We recommend using Granny Smith or Honeycrisp apples for baking. They keep their texture and flavor through the baking process.
  • When stirring in the flour, it's okay to leave pockets of flour. The flour will disappears when the apples are added.
  • Store blondies in an airtight container at room temperature for up to 5 days.

    We have made this 3 times in the last week. It’s a top 5 dessert recipe. I double the recipe using 5 medium apples (gala) in a ?9 x 13? Pyrex and bake for 33 minutes. I love that you don’t have to soften the butter so it can satisfy a spontaneous baking urge.

    Great recipe! The apples I used were very hard so I sauteed them beforehand with a bit of cinnamon and brown sugar then added to the batter. Turned out fantastic! Drizzled some salted caramel after they were done baking too!
