This delicious recipe forCauliflowerGround Beef Curry makes an easy and delicious comfort food meal. Saucy, hearty, with a unique mix of aromatic spices (that aren't hot), this is a beloved dinner recipe for the entire family.
First of all, I am soo sorry guys, to everyone who tried to access my blog yesterday! There was a major outage with my hosting company, causing all of our (mine and Konrad's and many other customer's) sites to be down for over 12 hours.
Super frustrating for everyone involved, but all seems to be fixed now. Alright, let's have food then. After all, it's the best cure for everything, right?
Filled with Vegetables, Adjust Spice to Your Preference
Especially when it is hearty comfort food like this CauliflowerGround Beef Curryover steaming white rice. There also are potatoes, carrots,and saucy tomatoes in here, all rounded up with an aromatic curry spice mixture.
The recipe as written out below does not make a spicy-hot curry. As is, it is a great starting point for all preference levels of spicy-ness. If you like a curry that makes you sweat, then simply increase the amount of red chili flakes and/or add cayenne pepper to the mix.
This delicious curry is so chock-full of veggies and bursting with flavor that I can't help but feel good about eating it. And all the yummy-ness puts me in such a good mood that all *cough* hosting *cough* frustrations (and others) just fade away. At any rate, enjoy the recipe!
Cauliflower Curry with Ground Beef

Ingredients
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 tablespoon olive oil or avocado oil
- 1 pound lean ground beef
- 2 teaspoons sea salt
- ½ teaspoon black pepper freshly ground
- 1 tablespoon curry powder
- ½ tablespoon ground coriander
- 1 ½ teaspoons cumin powder
- ½ teaspoon turmeric powder
- ¼ teaspoon red chili flakes
- ¼ teaspoon cinnamon
- 1 medium carrot thinly sliced
- 2 medium potatoes or 10 mini potatoes, diced
- ½ head cauliflower cut into florets
- 2 cups crushed tomatoes
- ½ cup water
Instructions
In a large skillet heat the oil on medium-high heat and add chopped onions. While stirring cook onions until soft, then add chopped garlic until both are lightly browned.
Add ground beef and all spices. Stir often and cook the meat well until nicely browned.
Stir in carrots, potatoes, cauliflower, tomatoes and water and bring to a boil. Turn heat to low and simmer covered for about 25 minutes until the potatoes are soft.
Taste and add more salt, pepper or chili if desired. Spices as listed make for a non-spicy curry. Add some cayenne pepper and/or more chili if you would like to spice this up.
Instant Pot Method:
Press the ‘Sauté’ button on your pressure cooker. Once it has preheated enough the display will indicate “HOT”.
Add the oil and onion. Sauté until the onion starts to turn translucent. Add garlic and sauté another minute.
Now add the ground beef and start breaking it up into small pieces. Add all seasonings (salt, pepper, curry powder, coriander, cumin, turmeric, chili flakes, and cinnamon). Stir everything together and continue browning the beef (about 5 minutes).
Once the beef is browned press “cancel” to stop the sauté function. Add the water and scrape up any browned bits from the bottom of the pot.
Stir in sliced carrot, potato dices, and cauliflower florets.
Pour the crushed tomatoes over top but DO NOT STIR. (Tomato touching the bottom of the Instant Pot often produces the dreaded BURN notice.)
Close the lid and turn pressure valve to sealing position. Cook on High Pressure for 5 minutes.
The pot will take about 15 minutes to pressurize before the timer starts counting down. Once cooking time is up turn the pressure valve to venting to quick release the pressure.
Add fresh chopped parley or cilantro to your liking. Serve this ground beef curry over steamed rice or quinoa.

We make a similar dish with just cauliflower and ground beef, but I wanted to try your recipe for the greater variety of spices and vegetables. Just a tip from my own experience here: half a cup of water is nowhere near enough if you want to cover the vegetables well enough that they cook while simmering. I would recommend you use a cup and a quarter, especially for the cauliflower and tomatoes. Though I did make one change from your recipe since I didn't feel like uing potatoes; I instead used celery, and didn't add red chili flakes since my family doesn't like things too spicy. The recipe turned out quite great!

I'm not the OP but you should be able to use any vegetables you like in a stew in my opinion. My tip though: give it a try with the cauliflower first. It tends to lose some of the taste you might dislike when cooked, and unlike brussel sprouts, doesn't smell nasty.

Making this now. I hope using curry paste instead of the spices works because my family is sick(back to school colds) and I’m tired lol. So far my taste tests say it’s gonna work but I might have to cool it off a bit with some yogurt. I really should have tried the spices individually but I need to use up my paste.

Yes I think you could replace the ground beef for chickpeas. If using canned chickpeas make sure to add them later in the cooking process so that they don't turn completely mushy

Absolutely, amazingly flavorful. Added cayenne pepper for the hotness, replaced beef for turkey coz I’m off red meat and PRO TIP if you’re gonna go spicy add some non fat Greek yogurt when serving to cool if off and give it that added creamy texture...you won’t regret it! Next time I will add peas as well for more veggies. I also didn’t use any rice, potatoes have enough of a starch for me

The picture shows it on a bed of rice, yet there's nothing about rice in your recipe. Is the rice a substitute for the potatoes or cauliflower? I'll be fine, but it's a little misleading.

"curry/cumin onion, garlic, potatoes, ground beef, cauliflower, & tomato (a bit of chix broth)." It came out TASTY!I then googled today to see any similar recipe and your site came up first!

This was really excellent! I think the key to what makes it good is the blend of spices you're using. Perfectly balanced. I only made 2 tweaks: I used sweet potatoes instead of regular potatoes, and I roasted the cauliflower for about 30 minutes. I would definitely make this again. This was so amazing. Thank you for this recipe!!! I didn't have cauliflower so I left that out and only had red skin potatoes. It turned out amazing!! I used 3 minced garlic, doubled the red pepper flakes and added cayenne as per your recommendation to make it spicier for my husband. This will def be part of out weekly meals.

I can't explain how glad I am to have found this recipe. My 4 y/o son has nearly a dozen food sensitivities & it is a nightmare finding suitable meals that the whole family will actually enjoy AND that don't take forever. This dish was simpler & quicker to make than I expected, & I nearly did a dance when both kids, 2 & 4, not only enjoyed it .. but asked for seconds! Uh oh. Were your potato dices on the bigger side? Next time I'd recommend adding hot broth (any kind) in order not to dilute the flavor/spices too much.

I am sorry to hear you didn't enjoy this curry Yvonne. I am very surprised it turned out dry for you. Did you add the water to the sauce before simmering? Also surprised it was tasteless. There is quite the spice mixture in this recipe. I am wondering if you maybe had a very large head of cauliflower that would absorb all the liquid and dilute the spice flavor?

I made this tonight & it was absolutely awesome! The only change I made is that I added a chopped jalapeño pepper, some golden raisins & a bit less mild curry power & replaced it with garam masala. I also added some reduced sodium beef broth. My husband loved it so much that he had seconds.

Bummer! This recipe is family favorite of ours. It's a huge hit time and again. This dish is more like Pakistani Keema than any Indian/Thai curry. Is that maybe the flavor you expected?

Oh my goodness I love this recipe. I have made it now 4 times and this last time tried the slow cooker. Amazing as I knew it would be. Just brown the beef onions, garlic and spices and throw everything else in. I also this time subbed sweet potatoes for regular. Amazing! Also finish off with a half cup of heavy cream. Also amazing! Thanks for sharing this. It is a family favorite!
