Egg Masala curry, a very flavorful robust Punjabi curry recipe. The egg curry is a versatile dish that can be eaten for lunch and dinner and is great comfort food and perfect protein dish to add to your everyday meal.

Protein is a buzzword in our everyday lives today. However, it is often related to or used in conjunction with bodybuilding and athlete industry. But protein is a macronutrient, that is required to be consumed by everyone on a daily basis, as 73% of the urban India is protein deficient.

Before I start today's recipe, I would first like to talk about an initiative “Right to Protein” Right To Protein is an initiative to educate the people in India about the importance of proteins for their general health, fitness and wellbeing. #RightToProtein campaign aspires to act as a catalyst in promoting consumption of different forms of proteins amongst Indians for better overall nutrition.

WHY SHOULD YOU INCLUDE PROTEIN IN YOUR DIET?

Protein is the building block of our body. These help our body in repair of tissues andmaintenance of muscle mass and promotes muscle growth. Proteins are great metabolic boosters and strengthen our muscles and tissues. Also, consuming proteins help in reducing heat and burn fat as a part of a balanced meal.

GOOD PROTEIN SOURCES

There are many good sources of proteins. Lean meats, eggs, dairy products like milk, yogurt, cheese, soy products, tofu, pulses and legumes like soybeans and lentils etc. You can check this protein index, devised to provide Indians with a list of easily accessible protein rich foods that target one’s home kitchen and grocery buying habits.

Now that I am talking about increasing protein intake and including good sources of protein. I make a conscious effort of include at least one good source of protein in all my daily meals including lunch, breakfast, and dinner.

One more thing there is a myth that vegetarians do not have the option of eating good protein. As I said this is a myth there are a lot of vegetarian protein options, like tofu, soy, paneer, quinoa, soybean whole pulses and dals which are good enough to meet our daily protein requirements.

  • Most of these protein sources are cheap and provide good quality protein. But still, almost 73% of diets in Urban India is deficient in protein.
  • So there is an immediate need to focus on increasing protein-rich food in our meals.

As the Republic day is approaching and for the betterment of our country and our society we take many pledges. On this Republic day let’s take a pledge to focus on our protein intake.

Now Coming back to today’s recipe, as I said eggs are a great protein source and is an easy on the go dish that tales less preparation time and can easily be prepared.

Hence, I am sharing my favorite egg curry recipe. This is a spicy and healthy North Indian style Punjabi egg masala curry. But I made it with few twists, to keep it flavorful but healthy at the same time.

Ingredients

  • 1 tablespoon ghee
  • 1 teaspoon rice bran oil
  • 6 eggs boiled
  • 2 Onion finely chopped
  • 4 Tomatoes blended to puree
  • 1 inch ginger piece cut into juliennes
  • 2 green chillies slit
  • ½ teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon black pepper powder
  • 1 teaspoon garam masala
  • 2 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon Kashmiri lal mirch powder
  • 1 teaspoon red chilli paste.
  • 3-4 tablespoon coriander leaves
  • 1 teaspoon kasoori methi
  • 1 tablespoon gram flour

Instructions

Prepare Hard Boiled Eggs

  • First hard boil the eggs. I have shared link for how to boil eggs Pan Method, Instant Pot Boiled eggs in the post above.

  • After peeling boiled eggs make 3-4 slits with a knife .

  • Heat 1tsp ghee in a pan and add a sprinkle or turmeric and salt.

  • In this pan stir the outer surface of eggs by gently cooking them from all sides to make it crispy.

Making Egg Curry

  • In the pan add remaining ghee and then add finely chopped onions.

  • Saute onion on slow heat till these turns light brown in color.

  • When onions are cooked add tomato puree and cook for a few minutes.

  • Cook till tomatoes are cooked through and ghee starts to separate. This will take approximately 10 minutes.

  • Then add spices and powders, turmeric, red chilli powder, coriander powder, salt, coriander powder, cumin powder, black pepper, garam masala powder, finally red chilli paste and mix well.

  • Add roasted gram flour to the pan and stir to combine well.

  • Then add ½ cups of water and cook the masala till ghee separates from the masala. Add sliced ginger.

  • Now add 1 cup water and boil the gravy when it starts to boil reduce it to slow simmer and cook for 3 more minutes. Sprinkle kasoori methi.

  • Then add boiled eggs and cook for few more minutes. When done garnish the masala egg curry with fresh coriander and serve.
