This Egg, Potato, and Sausage Skillet is so easy to make and perfect for breakfast, lunch, or dinner. It is so simple to throw together and tastes absolutely amazing.

Happy Sunday. Our Sunday mornings usually consist of a yummy breakfast and this is one of our go-to favorites.

I usually whip this up on the stove while my husband and kids are on pancake duty . . . it’s one of my favorite things. Why can’t every morning be as wonderful (and delicious) as Sundays?

I usually get at least 8 servings out of this recipe, but I will portion out the leftovers in individual serving containers, stick them in the fridge, and then we have “to-go” breakfasts ready all week.

It beats cold cereal any day.

You can seriously throw it together in minutes, and it’s perfect for breakfast, lunch or dinner. It is so yummy.

why aren’t my eggs setting?

For this recipe, the eggs aren’t added until just about everything else is cooked, because the eggs cook fast.

However, if you add the eggs too early, it will effect the cook time of everything else. We recommend letting the frozen potatoes cook all the way through, before adding your eggs.

You can also stir in your eggs a little bit. Sometimes I will make the eggs scrambled with this recipe, because my kids love their eggs scrambled.

If you still feel like your eggs aren’t sitting up properly, you can also put them under the broiler for a minute or two.

This will also melt your cheese a little more thoroughly.

what sauce could i put on this?

My husband is a total sauce lover. He can’t have food without sauce. I personally can eat this without any sauce, but my husband sauces all his breakfast foods.

This recipe is really delicious with some sauces and toppings.

Here are a few we recommend:

  • salsa
  • hot sauce
  • buffalo sauce
  • pico de gallo
  • salsa verde
  • ketchup
  • A1 Steak Sauce (my husband loves this on his sausage and eggs…)
  • maple syrup (also a husband favorite. If it’s a breakfast food, it has syrup on it).

All of my favorite breakfast foods- eggs, hashbrowns, and sausage - cooked up in one easy skillet meal. This also makes a delicious dinner!

Ingredients

  • 16 ounces turkey sausage (or your favorite kind of sausage
  • ½ yellow onion diced
  • 28 ounces frozen potatoes O'Brien 1 bag(with onions and peppers in it)
  • ¼ green pepper diced
  • ¼ red pepper diced
  • ½ cup broccoli finely chopped
  • 8 eggs lightly beaten
  • ½ cup skim milk (or almond milk works great in this recipe)
  • ¼ teaspoon garlic powder
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  • Heat a large skillet over high heat on the stove. Add the sausage and diced onion, cook for 4-5 minutes or until no longer pink. Drain, then add in potatoes, green pepper, red pepper, and broccoli to skillet.

  • In a medium bowl, mix together eggs, milk, garlic powder, and salt and pepper. Pour egg mixture over potato mixture in the skillet. Cover skillet with a lid, lower heat to medium-low and let cook for 10 minutes (don't stir it during this time).

  • Remove lid and continue to let it cook for 5-6 minutes, or until egg mixture is set. Remove skillet from heat and sprinkle with cheese. Let stand for a couple of minutes or until the cheese is melted.

  • Serve and enjoy!

    My eggs didn't set either so I ended up just stirring everything together which worked better. Kind of bland, but with some added flavors, it was ok.

    I've always finished cooking frittata in the oven after adding the cheese. That's way, the eggs set and the cheese melts and all is well.

    I cook my sausage and if there is not much oil in the pan after it has browned, then I add about 15 beaten eggs and scramble till done. I also cook my potatoes o'brien separately with taco seasoning. Add cooked potatoes to the sausage egg mixture and spoon onto tortilla shells and top with cheese and salsa for a great breakfast burrito. They freeze well and reheat in the microwave nicely for breakfast on the go.

    If your eggs didn't set be sure to THAW the potatoes and then cook them with the sausage for about 5 minutes before adding the eggs.
